Fab Friday Feature – Eat It Kansas City

This is my third installment of Fab Feature Friday and I am giving you some heavy hitters. Shanley is the beautiful foodie mastermind behind the popular blog Eat It Kansas City. I met Shanley via the internet, We’ve connected over our mutual love of food. Shanley and I finally met in person at a bloggers brunch earlier in the year and she is just as sweet as molasses!

Don’t let the sweetness fool you, Shanley packs a mean one-two punch when it comes to writing about food. Her creative style and enticing photography will not only have you licking your computer/mobile screens, But will also have you jumping in your car to try out the restaurant as well. The nature in which she describes the dishes will literally have your taste buds feel as if the fork just left your mouth. With that being said, Here’s Shanley with Eat It Kansas City

1) What inspired you to blog?
I’ve always loved eating. Growing up, my grandma accused me of having a “hollow leg” because no matter how much I ate I was hungry all the time. I haven’t outgrown that passion for stuffing my face, so I decided to make a hobby out of it. I merged my love for food and writing and Eat it Kansas City was born.

 

2) What’s the story behind your blog name?
Most of my blog posts revolve around Kansas City’s restaurant scene so “Eat it Kansas City” seemed like a natural fit. Plus, I wanted a name that had some sass to it.

3) What has been your all-time memorable food dish to date?
This is a tough one! I had one of the best meals of all time recently at The Bite in City Market. Their Señor Chang sandwich knocked my socks off. It’s made with tender slow roasted beef short rib, fresh cilantro, queso fresco, pickled red onion, candied jalepeno and sriracha creme. For dessert I polished off one of their homemade ice cream sandwiches, the Fig and Juice. The inside was made with fresh orange ice cream and fig compote while the outer sandwich layer had this delicious cookie dough consistency, but it tasted like a graham cracker. The entire meal was fantastic from start to finish.

4) Can you share something about yourself with my readers?
In addition to eating out, I also love to cook! It’s a hobby I’ve only started recently (so I’m no expert) but I love experimenting in my kitchen. Brunch dishes and desserts are my favorite things to make. I also love coming up with new cocktail recipes to share with my friends on the weekends. If anyone wants to swap recipe ideas – I’m your gal!

    Love this feature! Shanley introduced me to beignets a few weekends ago and I nearly fell of my bar stool mine was so good!
